Each and every one of the utensils that the chefs use with their five senses are carefully selected.


Delicious food can only be produced with properly maintained utensils.


It is also good to see the chefs facing the dishes from the counter seats in the fully open kitchen, and to drink each of their movements with sake.

Sake that makes you stand out

The local sake that the owner is particular about is purchased from several liquor stores that he is familiar with.

The wines selected by our dedicated staff are not particular about country or brand. A really good wine is a wine that resonates with food.
Please expect a wonderful encounter with local sake and wine with your five senses.

The material is the liver of the dish

Tajima beef is procured directly from the local area, which has the wonderful flavor of the meat's original umami and high-quality fat.


We purchase high-quality fresh fish from the Kyoto market, which boasts the largest scale in western Japan.


However, we are very particular about the ingredients, including horse vegetables, serpentine rice, soy sauce, salt, and even pickled plums.

The glass is part of the sake

The vessels are purchased from the artist's pottery and carefully selected one by one.
The author's enthusiasm gives the dish a wonderful seasoning.


The shape and thickness of the glass changes the taste of sake. Choose a glass that best brings out the personality of the wine. Beer glasses are handmade by Matsutoku Glass. When you put a cold glass of draft beer to your lips, you'll know why you chose that glass.
